Ingredients:
1 medium apple, grated (you can leave the peel on for extra fiber or peel it for a smoother texture)
150 g plain yogurt (approx. 2/3 cup) – Greek or regular, both work

1 large egg
100 g flour (approx. 3/4 cup) – use all-purpose, oat, or whole wheat flour
1 teaspoon baking powder

Optional additions for extra flavor:
1 teaspoon ground cinnamon
1 tablespoon honey or sugar

1/2 teaspoon vanilla extract
A pinch of salt
Instructions:
Prepare the Apple:
Wash and grate the apple using a coarse grater. If using a juicy variety, lightly press the grated apple with a paper towel to remove excess moisture (but don’t dry it completely—some juice adds flavor).

Mix Wet Ingredients:
In a medium bowl, whisk the egg and yogurt together until smooth and well combined. Stir in the grated apple, along with vanilla extract or sweetener if using.

Incorporate Dry Ingredients:
Add the flour, baking powder, and any optional spices (like cinnamon) to the wet mixture. Gently stir with a spatula or spoon just until combined. Do not overmix—the batter should be thick but pourable.

Rest the Batter (Optional but Recommended):
Let the batter rest for about 5–10 minutes. This helps the flour hydrate and gives the baking powder time to activate, making the pancakes fluffier.

Cook the Pancakes:

Flip and Finish Cooking:
