Ingredients:
4 chicken tenderloins
2 tablespoons olive oil
Juice of 1 lemon
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
1 red bell pepper, chopped
1 zucchini, sliced
1 cup cherry tomatoes, halved
1/2 cup kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
Instructions:
- In a small bowl, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Mix well to prepare the marinade.
