Lemon Herb Chicken Tenderloin with Mediterranean Vegetables

Ingredients:
4 chicken tenderloins
2 tablespoons olive oil

Juice of 1 lemon
2 garlic cloves, minced
1 teaspoon dried oregano

1 teaspoon dried thyme
Salt and pepper to taste
1 red bell pepper, chopped

1 zucchini, sliced
1 cup cherry tomatoes, halved
1/2 cup kalamata olives, pitted and sliced

  • 1/4 cup fresh parsley, chopped

Instructions:

  1. In a small bowl, combine olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Mix well to prepare the marinade.
  2. Place chicken tenderloins in a shallow dish and pour the marinade over, ensuring each piece is well coated. Let marinate for at least 30 minutes.
  3. Heat a grill or skillet over medium-high heat. Cook the chicken tenderloins for about 6-7 minutes on each side until cooked through.
  4. While the chicken cooks, in a separate pan, sauté the red bell pepper, zucchini, and cherry tomatoes in a drizzle of olive oil for about 5-7 minutes, or until tender.
  5. Add the sliced kalamata olives to the sautéed vegetables, stir well, and remove from heat.
  6. Serve the grilled chicken tenderloins over the vegetable medley, garnishing with fresh parsley.
